A culinary practice grounded in a cookbook in print for over twenty-two years and expanded through CogniCuisine, a methodology for human and AI collaboration in the kitchen. CogniCuisine's Flavor Liberation framework maps connections between ingredients across borders that cookbook shelves still silo. The current work, the Africa Series, is the first volume of a planned global flavor map covering every nation on earth.
Plated Jams turns dishes into songs. Each track begins with one of Robert's poems from thirty-plus years ago, adjusted into the language of a dish's cultural origin, and composed in a musical tradition connected to that origin.
